Healthy Spinach Pasta with Exotic Vegetables and Cream: This recipe is super easy and super healthy. You can add the vegetables according to your preference. Using this easy and healthy recipe, spinach pasta will be ready to serve in half an hour.

Spinach Pasta Ingredients:

  • 2 tablespoons of olive oil
  • 2 cups of boiled pasta
  • 1 tablespoon of butter
  • only 3 tablespoons of refine flour (all purpose flour)
  • 1 bundle of spinach blanched
  • half cup of warm milk
  • pepper to season
  • 2 tablespoon of cream
  • 1 chopped onion
  • one chopped carrot
  • 1 tablespoon of rushed garlic
  • 8-10 broccoli florets
  • few basil leaves
  • half cup of corn
  • 1 small chopped yellow zucchini
  • 1 small chopped green zucchini
  • one teaspoon of red chili flakes
  • 1 small chopped capsicum
  • 1 tablespoon of mixed herbs
  • 5-6 cherry half chopped tomatoes
  • grated cheese

Tips:

  1. If you don’t have cream, you can use mayonnaise.
  2. You can use regular cooking oil, if you don’t have olive oil.
  3. If you don’t have a blender, you can finely chop the spinach to make the spinach sauce.
  4. Make sure your spinach sauce is not too thick. Otherwise it will make spinach pasta very dry to eat later.
  5. If you don’t have butter, you can skip it and just use olive oil or regular oil but adding butter adds some extra taste to it.

Step by Step Recipe of Healthy Spinach Pasta:

Preparing the Spinach sauce:

Boil 2 cups of pasta and keep it separately.

Take out your frying pan and add 1 tablespoon of butter and 2 tablespoon of olive oil. Let it become hot on medium flame.

Add 3 tablespoons of refined (all purpose) flour and keep stirring it for one minute.

After one minute when it starts to change its color, add half cup of warm milk to it. It helps in cooking the sauce faster.

Keep stirring until there are no lumps. Now add some salt and pepper and keep on stirring on low flame.

Meanwhile, take out your blender and put the bundle of spinach in it with 2 tablespoon of fresh cream. Blend it for 3 to 5 minutes to make a puree.

Add this spinach mixture to the white sauce that we were cooking in the frying pan. Keep stirring and mix it well.

Spinach sauce is ready! Now its time to cook the vegetables in a separate pan.

Cooking the Vegetables:

Now, in another sauce pan, add 2 tablespoons of oil with some garlic followed by one copped onion as suggested in the ingredients section.

Now add chopped broccoli, carrots, yellow and green zucchini, capsicum, corn, and basil leaves as suggested in the above ingredients section for spinach pasta.

Put salt to taste, pepper, red chili flakes, mixed herbs and stir it for 5 to 7 minutes. Keep mixing it until it becomes soft and tender.

At last, add half chopped 5-6 cherry tomatoes and stir it for two minutes. Once the vegetables are soft and cooked, turn off the flame.

Mixing Pasta and Vegetables with Spinach Sauce:

Now, toss the boiled pasta into the spinach sauce and mix it well. Then add the cooked vegetables in it and mix it well until 1 to 2 minutes in low flame.

You can add one tablespoon of fresh cream if you want.

When everything is perfectly mixed, add some grated cheese on top with a pinch of mixed herbs and serve hot.
