Healthy Spinach Pasta with Exotic Vegetables and Cream: This recipe is super easy and super healthy. You can add the vegetables according to your preference. Using this easy and healthy recipe, spinach pasta will be ready to serve in half an hour.
Feel free to give this spinach pasta recipe your own twist and turn in terms of vegetables, type of oil, butter, herbs and cream. It is hands down one of the best and popular spinach recipes. So without any delay lets jump to the ingredients:
Boil 2 cups of pasta and keep it separately.
Take out your frying pan and add 1 tablespoon of butter and 2 tablespoon of olive oil. Let it become hot on medium flame.
Add 3 tablespoons of refined (all purpose) flour and keep stirring it for one minute.
After one minute when it starts to change its color, add half cup of warm milk to it. It helps in cooking the sauce faster.
Keep stirring until there are no lumps. Now add some salt and pepper and keep on stirring on low flame.
Meanwhile, take out your blender and put the bundle of spinach in it with 2 tablespoon of fresh cream. Blend it for 3 to 5 minutes to make a puree.
Add this spinach mixture to the white sauce that we were cooking in the frying pan. Keep stirring and mix it well.
Spinach sauce is ready! Now its time to cook the vegetables in a separate pan.
Now, in another sauce pan, add 2 tablespoons of oil with some garlic followed by one copped onion as suggested in the ingredients section.
Now add chopped broccoli, carrots, yellow and green zucchini, capsicum, corn, and basil leaves as suggested in the above ingredients section for spinach pasta.
Put salt to taste, pepper, red chili flakes, mixed herbs and stir it for 5 to 7 minutes. Keep mixing it until it becomes soft and tender.
At last, add half chopped 5-6 cherry tomatoes and stir it for two minutes. Once the vegetables are soft and cooked, turn off the flame.
Now, toss the boiled pasta into the spinach sauce and mix it well. Then add the cooked vegetables in it and mix it well until 1 to 2 minutes in low flame.
You can add one tablespoon of fresh cream if you want.
When everything is perfectly mixed, add some grated cheese on top with a pinch of mixed herbs and serve hot.
