Healthy Spinach Salad Recipe: Super Quick and Super Healthy

This recipe of Cucumber Spinach salad is so easy that it will take less than 10 minutes to prepare.

Ingredients for this Greek inspired spinach salad:

  • One bowl of raw baby Spinach leaves
  • One cucumber
  • Tomato (either cherry tomatoes or regular)
  • Pomegranate seeds
  • Olive oil
  • Beetroot
  • Pepper to taste (not necessary if you don’t like it)
  • Salt to taste
  • Sweet corns (optional)
  • Lemon
  • Pine nuts
  • pumpkin seeds
  • Feta cheese (crumbled of in chunks)

Tips:

  • You can use balsamic vinegar in place of lemon if you want.
  • You can also use salad cream.

Step by Step Spinach Salad Recipe:

  • Thoroughly wash the baby spinach leaves and let them dry completely. You can wipe them with a clean towel or you can use paper towels.
  • Take a bowl, put these raw baby spinach leaves in it and keep it aside.
  • Take a cucumber and slice it in small pieces and put it in another bowl.
  • Slice a medium sized tomato and cut it into medium pieces (You can also use cherry tomatoes). Put them in the bowl in which you have kept cucumber slices.
  • Chop a beetroot and add it.
  • Mix cucumber, tomatoes and beetroot together.
  • You can even add sweet corns in it if you like. It is up to you.
  • Put 4 to 5 teaspoons of olive oil into it.
  • Put some pumpkin seeds, pomegranate seeds and pine nuts.
  • Add pepper to taste.
  • Add salt to taste.
  • Now toss it well with the help of spoons.
  • Add this salad to the bowl in which you have kept baby spinach leaves.
  • Squeeze a lemon on top.
  • Mix it well with the help of two spoons.
  • At last, add 5 to 6 tablespoons of feta cheese (crumbled or in chunks) and give it a good mix.
