Creamed Spinach Recipe: The best way to make Creamed Spinach

Creamed Spinach is one of those recipes which lets you have your fare share of greens in a creamy, buttery and delicious way. We are not compromising in taste and using butter, all purpose flour, onion, garlic, pepper and clove.

Creamed spinach is a perfect side dish which is goes well with any main dish. You can make it a bit healthier by using less butter and less all purpose flour if you are willing to compromising on taste.

This recipe is also a perfect and smart way to use up any dying spinach.

Tips:

  • If you don’t have cold milk, you can use normal milk.
  • Don’t use packaged ground nutmeg powder. Use the fresh one.
  • You can use frozen spinach leaves if you don’t have fresh ones.
  • Don’t use any yellow spinach leave and discard any hard stems.

Ingredients for Creamed Spinach:

  • 500 grams of baby spinach leaves. Thoroughly washed and dried.
  • 4 tablespoons of all purpose flour (refined flour aka maida).
  • 3 tablespoons of butter (1 for spinach and 2 for the sauce)
  • One finely diced onion
  • 5-6 finely minced garlics
  • 1 cup cold whole milk
  • Salt to taste
  • Pepper to taste
  • One whole clove
  • One large pinch of freshly ground nutmeg

Step by Step Creamed Spinach Recipe:

  • Put one tablespoon of butter in a large pot and melt it on a high heat.
  • Put rest of 2 tablespoons of butter in a separate pot. We are going to use it later for the sauce.
  • Add 500 grams of baby spinach leaves on the butter. Mix it well and close the lid for one minute.
  • Open the lid and stir it well and keep doing it couple of times.
  • After 3 or 4 minutes, spinach leaves become soft and wilted. Take the spinach leaves out and put them in a container with holes so that it can drain fluid.

Preparing the Sauce:

  • Now, we are going to make the sauce. Put rest of 2 tablespoons of butter in a pot and melt in on a medium flame.
  • Add one finely diced onion in it. Stir it until onions become soft and golden.
  • Now, add one whole clove and stir it for two minutes and take it right out. Don’t leave the clove in there. It will give a really subtle scent to our creamed spinach.
  • Now add 5-6 finely minced garlics and 4 tablespoons of all purpose flour and stir it well. Cook it for 3 minutes.
  • Add one cup of cold milk. Turn down the heat to low and cook it for 10 minutes.
  • Now, add salt and black pepper to taste.
  • Add one large pinch of fresh ground nutmeg.
  • Now put the flame to low. We are going to add spinach in it.
  • Take your drained spinach and press it between paper towels to dry it. Keep doing it until it becomes completely dry.
  • Now chop the spinach with a large knife and add it to your sauce. Stir it in a low flame for a couple of minutes and your delicious creamed spinach is ready to be served.
