This is a delicious and easy grilled spinach corn sandwich recipe. You can prepare these sandwiches in less than 30 minutes.
These are perfect for breakfast or as evening snacks. You can even pack them in a lunchbox. These sandwiches are so yummy and cheesy that even if you don’t like spinach, you would probably finish them all.
This is a delicious way to eat your share of greens. You can even make this healthy by replacing all purpose flour with whole wheat flour or oats and reduce the amount of butter and cheese.
You can even add some more vegetables such as carrots, peas and beans if you like them.
Ingredients for Spinach Corn Sandwich:
4-5 small cubes of Butter (50 grams)
1 tablespoon of chopped garlic
400 grams of spinach
Sweet corn – 200 grams
2 tablespoons of all purpose flour (refined flour)
200 ml of milk
1 teaspoon of salt (or according to your taste)
1/2 tablespoons of black pepper powder
1 teaspoon of chili flakes
30 grams of mozzarella cheese
Cheese slices to taste
Bread slices to taste
And lastly, butter for brushing outside the bread slices
You can even add oats instead of all purpose flour.
Butter enhances the taste of spinach corn sandwich but if you don’t have butter, you can use regular cooking oil.
Step by Step Corn Sandwich Recipe with Cheese:
Preparing the Filling of Corn Spinach Sandwich:
Firstly, heat 50 grams butter in a skillet, add 1 tablespoon garlic and stir well until they become light brown in color.
Then, add 250 grams sweet corn and give it a good mix.
Cook it for 4 minutes on medium flame and keep stirring.
After that, add 400 grams spinach and mix it well. Cook it for another 5 – 6 minutes on medium flame.
Now, add 2 tablespoons refined flour (all purpose flour) and give it a good mix.
After that, add 200 milliliters of milk, stir it and mix it well. Let the milk boil.
Now add 1 teaspoon of salt (or to taste), half teaspoon of black pepper powder and 1 teaspoon of red chili flakes. Give it a good mix.
Cook it for another 5 to 7 minutes on medium flame.
Now add 30 grams of mozzarella cheese and again mix it thoroughly.
Turn off the heat and and keep the skillet aside. The spinach corn filling is prepared.
Grilling and Final Steps:
Now take 2 bread slices and cut it’s edges. (If you like to eat the edges then don’t cut them)
Then, place thinly cut cheese slices over the bread slices.
Now, add the spinach corn mixture that you have just prepared over it with the help of a spoon. Give it a good and thick fill.
Cover it with another slice of bread and place in on a grill machine.
Brush the outside of bread slices with butter.
Close the lid of the grill machine and grill for about 6 to 7 minutes until it becomes golden brown in color.
Cut it into half diagonally or vertically, whichever way you like to have your sandwich.
